Strawberry Oat Crumb Bars

Strawberries with an oat base and crumbly top; fragranced with cinnamon and lemony tart. These breakfast bars and a cup of wake up will make your morning. These bars come together quickly. 1 cup rolled oats
¾ cup flour
½ cup brown sugar
½ tsp salt
1 tsp cinnamon
6 Tbsp butter, melted
1 tsp vanilla
Strawberry Filling:
2 cups strawberries, hulled and chopped
2 Tbsp sugar
1 Tbsp cornstarch
1 lemon, zested and juiced
Preheat oven to 350*. Line an 8” square baking dish with parchment and set aside. In a large mixing bowl layer oats, flour, brown sugar, salt and cinnamon. Stir until mixed, stir in the butter and vanilla mixing well. Pour ⅔ of the oat mixture into the prepared baking dish, pressing evenly. Reserve the ⅓ oat mix left for the topping.
Stir strawberries, sugar, cornstarch, lemon zest and juice in a mixing bowl. Spread evenly over the oat base. Sprinkle the last of the oat crumbs over the strawberries and bake for 35-40 minutes. They will be golden around the edges. Allow to cool before slicing.
