Lovely lemony limoncello is an Italian style liqueur made of the zest of lemons and vodka. It takes about 5 days of marinating time and you will have some lemons to juice for lemonade (or lemon drops). Look for some cute swing cap jars for sharing with friends. Everyone will want some.

12 lemons, zested

75o ml vodka

Pour zest and vodka in a quart jar and cover with a lid, steep for four days.

On day 4 make your simple syrup.

2 cups water

2 1\2 cups sugar

Heat water in the microwave or on the stovetop until hot but not yet boiling. Add sugar and mix in a 8-cup glass measurer or mixing bowl until the sugar dissolves. Allow to cool and add lemon zest and vodka; cover with plastic wrap overnight.

On day 5, strain your limoncello with a sieve, discarding zest (or saving it for cooking with). Using a funnel pour the golden delicious limoncello into clean sterilized bottles. I’ve used quart jars, weck jars, swing cap jars, and even the leftover empty vodka bottle.
