Passion Fruit Spritz

Passion fruit spritz with passion fruit liqueur, vodka, passion fruit syrup, and topped off with prosecco. Inspired by Shanna of Pineapple and Coconut https://www.pineappleandcoconut.com/passion-fruit-vodka-soda/ 

2.5 oz vodka or citrus vodka 

1.5 oz passion fruit liqueur 

1 oz passion fruit simple syrup 

2 limes

Prosecco or other sparkling wine, for topping off

Mint, for garnish

Passion Fruit Simple Syrup:

½ cup boiling water  

½ cup sugar 

½ cup frozen passion fruit 

Fill a shaker with ice and add vodka, passionfruit liqueur, passion fruit simple syrup, and the juice of 1 ½ limes. Cut the remaining lime half into wheel slices for garnish and hang one on the edge of the glasses. Shake the cocktail up and fill the two champagne glasses about halfful. Top off the cocktail with prosecco or sparkling wine of your choice. Add mint for garnish.

To make the passion fruit syrup, pour boiling water over sugar and stir until dissolved, then stir in the passion fruit. Store in a lidded container in the fridge for up to 2 weeks.
