Pineapple Coconut Paloma

Creamy coconut pineapple paloma is delightfully refreshing with bubbling coconut water and a light citrusy flavor. Have you tried the sparkling coconut yuzu water yet from Trader Joe’s? It’s delicious on its own and even more wonderful paired with the pineapple in this creamy drink.

16 oz frozen pineapple, thawed

14 oz coconut milk

Add one cup to each glass

1 1/2 oz tequila Anejo

1 oz simple syrup

1 can sparkling coconut yuzu water (from Trader Joe’s) or any sparkling coconut water

In a blender, purée together the pineapple and coconut milk. Pour about 1 cup into a large martini or wine glass and add 1 ½ oz tequila and 1 oz simple syrup into each glass. Top with about ⅓ cup of sparkling coconut water per cocktail.
