Berry and Farmer Cheese Tart

This beautiful tart dotted with fresh berries and made of farmers cheese is almost like a very tangy cheesecake. A layer of lingonberries or berry jam lines the pastry. Inspired by Gourmet Magazine, July 1993 edition.

Pastry:

1 cup + 2 Tbsp flour

3 Tbsp sugar

¼ tsp salt

¼ tsp baking powder

6 Tbsp butter, sliced into tablespoons

1 egg

1 Tbsp lemon juice

2 Tbsp lingonberries or any berry jam you like


Preheat the oven to 375*. Layer flour, sugar, salt, baking powder and butter in a food processor or mixing bowl. Blend mixture until it resembles coarse crumbs. Add in the egg and lemon juice mixing until it just comes together. Press pastry into a 10” fluted tart pan. Brush with the lingonberries or jam and prick the pastry with a fork. Bake for 18 minutes. Mix the filling ingredients while tart pastry is baking. 


Filling:

¼ cup sugar

1 egg

1 tsp cornstarch

1 lemon, zest of  

8 oz farmers cheese 

½ cup cream

1 ½ cups mixed fresh berries, raspberries, blueberries and blackberries

Additional berries, for garnish

Mint sprig, for garnish

Mix in a food processor or whisk together in a mixing bowl, the sugar, egg, cornstarch, farmers cheese and cream until smooth. Place berries in the bottom of the parbaked pastry shell and pour the filling on top. Continue to bake for 25 minutes. Allow to cool before garnishing with the berries and mint.
