Limoncello adds a lovely lilt to this lemon mascarpone custard. Lemon, grand marnier and limoncello infuse this layered treat with lady fingers, mascarpone cream and zabaglione. This can be made in a 8” baking dish or in individual serving dishes. I made mine in margarita glasses so you could see all the beautiful layers. Inspired by Katherine at Rufus' Food and Spirits Guide. Katherine suggests making a lemon drop with the leftover simple syrup and lemon juice while waiting for the desserts to chill. I fully support this idea.  https://rufusguide.wordpress.com/2011/07/13/tiramsu/

Zabaglione:

4 egg yolks

¼ cup sugar

¼ cup limoncello

1 Tbsp grand marnier

Stir egg yolks and sugar with a whisk until pale and thickened in a double boiler or metal mixing bowl over a saucepan with about 2” of barely simmering water over low heat. Slowly drizzle in grand marnier and limoncello. Continue cooking over low heat about 5 minutes, stirring until mixture is thickened and smooth. Remove from heat and let cool at room temperature.

Mascarpone Cream:

8 oz mascarpone, at room temperature

¼ cup powdered sugar

1 egg white, optional

1 Tbsp grand marnier

2 Tbsp limoncello

1 lemon, zested and juiced

In a mixing bowl, beat mascarpone, powdered sugar, egg white, grand marnier, limoncello, lemon zest and juice until smooth.

Cake Layers:

1 3-oz pack ladyfingers

3 oz limoncello

3 oz simple syrup

Pour the limoncello and simple syrup in a baking dish, quickly dip in the lady fingers on both sides. In a margarita glass place 3 cookies vertical going up the sides of the glass/glasses (like an upside down triangle). Top with a spoonful of zabaglione and then mascarpone cream. Create 2 more layers (horizontal this time) of lady fingers, zabaglione and mascarpone cream to complete 4 delicious desserts. Refrigerate until serving time.

Simple Syrup:

2 cups hot water

2 cups sugar

Heat water in the microwave or on the stove top until hot but not yet boiling. Mix until the sugar dissolves and store in a mason jar in the fridge.
