Black Bottom Peanut Butter Pie

Mascarpone peanut butter mousse nestles atop a chocolate black-bottom salty pretzel pie crust, topped with a generous mound of vanilla whipped cream. I’ve included a link for my perfectly flakey pie crust below if you prefer a classic pie crust. 2 cups  mini salted pretzels

6 Tbsp butter, melted 

2 Tbsp brown sugar 

Black Bottom:

1 cup dark chocolate chips 

1 Tbsp coconut oil 

2 Tbsp heavy cream 

Peanut Butter Filling:

8 oz mascarpone cheese, softened 

¾ cup powdered sugar 

1 ½ cups peanut butter 

1 cup heavy cream

1 tsp vanilla or vanilla bean paste

Whipped Cream Topping:

1 cup heavy cream 

1 Tbsp vanilla or vanilla bean paste or bourbon vanilla bean paste 

Mini peanut butter cups or chocolate shavings, for garnish 

Preheat oven to 350*. Spray oil or spread butter in a 9” deep pie pan. In a food processor, add pretzels, butter, and brown sugar. Pulse mixture into fine crumbs. Press crumbs evenly into the prepared pie plate and up the sides. Bake for 8 minutes, until golden brown. Allow the crust to cool. 

In a microwave-safe measurer or bowl, heat the chocolate chips, coconut oil, and cream together for about 1-2 minutes or until melted. Spread the chocolate mixture over the crumb crust and spread up the sides. Place in the refrigerator. 

In a stand mixer using a wire whisk, whip the mascarpone cheese and powdered sugar together until smooth and creamy, about 2 minutes. Add the peanut butter, beating until smooth. Drizzle in the heavy cream and whip until the creamy mixture resembles medium peaks when the whisk is raised. Stir in vanilla, then spread evenly over the chocolate layer. Place in the fridge and cool. 

Whip the heavy cream to soft peaks, add vanilla or bourbon vanilla bean paste, and whip to medium peaks. Mound on top of the peanut layer. Cool in the fridge for 2 hours before slicing and serving. 

Top with mini chocolate peanut butter cups or chocolate shavings as desired.
