Bittersweet Chocolate Raspberry Cremets

Delectable dark chocolate cremets with a tart raspberry sauce. 

8 oz cream cheese, softened 

2 Tbsp sugar 

6 oz dark chocolate chips, melted 

1 cup heavy cream

1 Tbsp vanilla or vanilla bean paste

3 Tbsp raspberry liqueur such as chambord

Raspberry Sauce:

12 oz raspberries

2 Tbsp cornstarch 

¼ cup sugar 

¼ cup chambord or raspberry liqueur

In a stand mixer, whip cream cheese and sugar until fluffy. Melt chocolate in the microwave for 1 minute, then stir until smooth. Beat into the cream cheese mixture. Scrape the bowl down with a rubber scraper and tin the heavy cream. Whip to soft peaks then add in the vanilla and raspberry liqueur. Whip mixture to medium peaks. 

Combine raspberries, cornstarch, sugar, and raspberry liqueur in a large measurer or other microwave-safe bowl. Microwave for 1 minute at a time until the jammy sauce comes together thickened and is clear rather than milky looking from the cornstarch. Spoon a layer of jam into the ramekins or small bowls and let cool in the fridge. 

Spoon or pipe the chocolate cream mixture on top of the cooled raspberry jam. Garnish with fresh raspberries as desired and serve chilled.
