Tiramisu Brownies

Espresso Brownies:
1 cup butter
14 oz dark chocolate chips
1 cup brown sugar
½ cup sugar
1 tsp salt
1 Tbsp vanilla
1 Tbsp instant espresso powder
5 eggs
1 cup flour
½ cup unsweetened cocoa powder
Tiramisu Cream:
16 oz mascarpone cheese
¼ cup sugar
¼ tsp salt
1 ½ cups heavy cream
1 Tbsp vanilla bean paste
3 Tbsp kahlua or (other coffee liqueur)
3 Tbsp unsweetened cocoa powder
Preheat oven to 350°. Butter a 9 x 13 pan and set to one side. In a 2 quart measurer or other microwave-safe bowl melt butter and dark chocolate together for approximately 1-2 minutes, stir until smooth. Add brown sugar, sugar, salt, vanilla, and espresso powder; stir until mixed. Whisk in eggs, one at a time. Add flour and cocoa powder, mixing until just incorporated. Spread evenly into the prepared pan and bake for 25 minutes. The top looks slightly crackled, allow them to cool.
In a stand-mixer, using the whisk attachment, beat mascarpone sugar, and salt together. Add heavy cream and whisk to soft peaks. Scrape the bowl down then add vanilla and Kahlua. whisk together for another minute or until a medium-stiff peak is achieved when the beater is lifted.
Allow brownies to cool completely before topping with the tiramisu cream, spread evenly. Dust the top with up to 3 tablespoons of unsweetened cocoa powder. Refrigerate until firm, then cut into 18 bars and serve.
