Chocolate Banana Peanut Butter Bites

Delectable chocolate-covered banana and peanut butter bites have flaky fleur de sel salt sprinkled on top. The hardest part of making this sweet treat is waiting for the chocolate to set.


12 oz dark or semi-sweet chocolate chips

2 Tbsp coconut oil

1 banana, sliced

½ cup peanut butter (I like chunky)

1 Tbsp fleur de sel or other flaky salt  

Microwave chocolate chips and coconut oil in a Pyrex measurer or a microwave-safe mixing bowl for one minute and stir until smooth. Line about 16 mini liners in a mini muffin tin or just on a plate if you don’t have one.

Add 1 teaspoon of the melted chocolate mixture into each mini muffin liner. Drop a slice of banana on top. Microwave the peanut butter for just a few seconds so it’s runny but not too hot. Top with 1 teaspoon of peanut butter smoothing it flat as needed. Top the peanut butter layer with one more teaspoon of the melted chocolate mixture and sprinkle with flaky salt. Chill until set in the refrigerator.
