Christmas Crack Toffee

Saltine crackers with peanut butter, brown sugar toffee and peanut M&M’s topped with dark chocolate. It wouldn’t be the holiday season without these amazing treats. Just try to eat just one! This is an annual family tradition and has been enjoyed at family celebrations as well as bake sales for education over the years. Have your ingredients out and the peanut M&M’s cracked ahead as this recipe comes together in under 10 minutes. 1 sleeve of salted saltine crackers, about 40
1 cup butter
1 cup brown sugar
1/2 cup chunky peanut butter
2 ½ cups dark chocolate chips
1 cup peanut M&M’s, cracked (or mini M’s)
Holiday sprinkles or colored sanding sugar, for decorating
Maldon sea salt, a sprinkle
Preheat oven to 400*. Line a rimmed baking cookie sheet with the crackers. In a small saucepan bring the butter and brown sugar to a boil. Allow to boil for 3 minutes, pour over the crackers and bake for 5 minutes. Meanwhile, microwave the peanut butter in a glass measurer, when the toffee comes out, pour the peanut butter over the toffee and smooth with a rubber scraper. Top with the chocolate chips and return to the oven for 1 minute. Remove from the oven and smooth the chocolate layer. Top with the M&M’s and desired decorations, maldon salt, etc. Let chill in the refrigerator or at room temperature until set. Break into cracker-sized pieces.
