Cranberry Pear Walnut Galette

1 lb puff pastry 

2 pears, sliced

1 cup cranberries 

1 cup chopped walnuts 

2 Tbsp sugar 

2 Tbsp brown sugar 

1 Tbsp pumpkin spice

2 tbsp butter, melted

1 tsp vanilla or bourbon vanilla

1 egg

1 Tbsp water 

Coarse sugar, for sprinkling 

Preheat oven to 375*. Roll the puff pastry sheet with a rolling pin onto a lightly floured parchment sheet into a roughly larger rectangle. Using a pizza or pastry roller, cut the pastry into a pear shape (you can fashion some of the extra scraps into leaves). Lay pear slices on top of the pastry pear leaving about a 1-inch edge for turning over. Scatter cranberries and walnuts over pears. Mix sugar, brown sugar, pumpkin spice, butter, and vanilla in a bowl. Drizzle the mixture over the galette. Turn the edge over on top of the filling, mix egg and water, and brush over the pastry edge. Sprinkle with the coarse sugar and transfer the parchment to a baking sheet. Bake for about 35 minutes. The pastry will be a beautiful golden brown.
