Chocolate Chocolate Chip Gingersnaps

1 cup butter, softened
1 cup brown sugar
½ cup molasses
3 Tbsp crystallized ginger, minced
3 cups flour
¼ cup baking cocoa powder
2 tsp baking soda
1 Tbsp cinnamon
1 Tbsp ground ginger
1 tsp ground cloves
½ tsp nutmeg, freshly grated is best
12 oz dark chocolate chips
Sugar and Spice:
¼ cup sugar
½ tsp cinnamon
½ tsp ground ginger
¼ tsp nutmeg, freshly grated is best
¼ tsp ground cloves
¼ tsp ground cardamom
Preheat oven to 350*. In a stand mixer, cream butter and brown sugar for 2 minutes, until light and fluffy. Add in the molasses and crystallized ginger. In a mixing bowl, whisk flour, cocoa powder, baking soda, cinnamon, ginger, cloves, and nutmeg together. Spoon over the butter batter with the chocolate chips. Turn the mixer on at a low speed and mix until incorporated. Scoop the dough into tablespoon-size cookies and roll them into the sugar before placing them on silpat or parchment-lined baking sheets. Flatten the dough rounds with a flat bottom cup, then bake for 10-12 minutes.
