Soft Pumpkin M&M Cookies

Soft pumpkin cookies with M&M’s freshly baked out of the oven will melt your heart. Inspired by Heather of Heathers French Press.
2 cups butter, softened
1 ½ cups brown sugar
1 cup sugar
2 eggs
15-oz pumpkin
2 tsp vanilla
5 cups flour
2 tsp baking soda
1 tsp salt
1 Tbsp cinnamon
2 cups mini M&M’s
Preheat oven to 350*. In a stand mixer, cream butter, brown sugar, and sugar for about 2 minutes, until light and fluffy. Stir in eggs, pumpkin, and vanilla. In a mixing bowl, whisk flour, baking soda, salt, and cinnamon. Stir into the batter with M&Ms at a low speed until incorporated. Drop dough by tablespoon-size mounds onto silpat or parchment-lined cookie sheets and bake for 15 minutes.
