Easy Peanut Butter Cookies with Espresso Chocolate

Easy delicious peanut butter cookies dipped in melted espresso chocolate with a sprinkling of flaky salt.
1 cup peanut butter
1 cup sugar
1 egg
1 Tbsp flour
6 oz espresso chocolate chips, melted
Fleur de sel, a sprinkle
Preheat oven to 350*. Mix peanut butter, sugar and egg in a stand mixer until fluffy and light. Add in the flour and mix until just incorporated. Scoop into tsp-sized balls onto a baking sheet. Flatten a bit with a fork and bake for 8-10 minutes. Microwave the espresso chocolate chips in a microwave-safe bowl for 1 minute. Stir until all chips are melted. Dip half the cookie in the chocolate. Place on parchment and sprinkle with salt.
