French Strawberry Cake

A one-bowl jammy strawberry cake that is low fuss and tastes elegant with a sugar crisp top that you can’t wait to sink your teeth into. This cake has a flavorful tender almost custard-like crumb and shows off nature’s amazing strawberry season. ½ cup butter + more for the pan

1 ¼ cup sugar, divided

2 eggs

1 tsp vanilla

1 ⅓ cups flour

1 ¼ tsp baking powder

¼ tsp salt

½ cup sour cream

2 cups fresh strawberries, hulled and halved


Preheat oven to 350*. Butter a 9” cake pan and sprinkle with a dusting of flour or sugar. In a stand mixer, beat the butter with 1 cup of sugar for 5 minutes or until fluffy and pale. Add eggs and vanilla and beat for 1 minute. Scrape down the sides and bottom of the bowl. Sift the flour, baking powder and salt over the mixer bowl and top with the sour cream. Stir in until just combined. Add in the strawberries and fold in by hand. Scrape batter into the prepared cake pan and smooth the top. Sprinkle the remaining ¼ cup of sugar evenly over the top of the cake. Bake for 35-40 minutes, a toothpick test should come out clean. Cool completely in the pan.
