Harvest Crisp

A scoop of fall! This pumpkin cranberry apple crisp with a cranberry pecan oat topping is reminiscent of Autumn in a bowl; pumpkin spice and everything nice. Serve warm with cinnamon whipped cream.

1 cup pumpkin 

2 apples, diced

1 cup cranberries 

2 Tbsp cornstarch 

1 Tbsp pumpkin pie spice

½ cup brown sugar 

Cranberry Oat Topping:

1 cup oats

½ cup cranberries

½ cup brown sugar

½ cup coconut oil

1 cup walnuts or pecans

1 Tbsp pumpkin pie spice

½ tsp ground cloves


Preheat oven to 375°.In a large bowl mix pumpkin, diced apples, cranberries, brown sugar, cornstarch, and pumpkin pie spice. Spread into a 9”-square baking dish.

In a food processor, layer, oats, cranberries, brown sugar, coconut oil, nuts, and seasonings. Pulse until the oats, nuts, and cranberries are coarsely chopped. Spread evenly over the fruit mixture. Bake for 40 minutes, the crisp topping will be golden and the crisp bubbly around the edges. Serve with cinnamon, whipped cream or ice cream as desired.

Cinnamon Whipped Cream:

1 cup heavy cream

2 Tbsp sugar (or cinnamon maple syrup if in season @costco)

½ tsp cinnamon or pumpkin pie spice

1 tsp vanilla

Whip cream and sugar to medium peaks, add cinnamon and vanilla, and continue to whip to medium-stiff peaks.
