Passion Fruit Curd

A spoonful of sunshine, passion fruit curd makes just about everything amazing. I buy passion fruit without seeds in the freezer section. Inspired by my girl Audrey, who love, love, loves passion fruit. Great spooned over cake, as a filling in donuts, on toasted and buttered English muffins, toast, etc.

1 cup frozen passion fruit

3 eggs

1 lemon, zested and juiced

¾ cup sugar

½ cup butter, cut into tablespoons


Whisk passion fruit, eggs, lemon zest, lemon juice, and sugar in a medium-sized saucepan until well combined. Turn to low heat and cook, stirring constantly until thickened and bubbly. Take off the heat and stir one tablespoon of butter in at a time. It will continue to thicken as it cools. Store any leftovers in the refrigerator; it will last about 2 weeks.
