Individual Plum Crisps

Tart purple plums with apple pie spice and vanilla with a buttery oat and pecan crisp topping. Eat warm out of the oven with a large dollop of vanilla whipped cream.

2-3 medium-sized plums, sliced

½ tsp apple pie spice or pumpkin pie spice

1 Tbsp brown sugar

½ tsp vanilla


Crisp Topping:

½ cup oats

½ cup pecans

¼ cup butter, softened

1 tsp apple pie spice

1 Tbsp cornstarch

Salt, a pinch

¼ cup brown sugar


Preheat oven to 375*. Slice plums into a medium-sized mixing bowl. Gently mix the apple pie spice, brown sugar and vanilla into the plums and divide into 4 oven-proof dishes or ramekins.


Layer oats, pecans, butter, spice, cornstarch, salt and brown sugar into a food processor and pulse into a crumbly meal. Divide on top of the plums and bake for 30 minutes. Eat warm with a dollop of vanilla whipped cream.


Vanilla Whipped Cream:

½ cup cream

2 Tbsp brown sugar

1 tsp vanilla paste


Beat cream and brown sugar to soft peaks in the mixer, add the vanilla and mix to incorporate. Spoon a large dollop on the warm crisp.
