Peanut Butter Brownie Cups

¾ cup sugar

¼ cup butter

1 Tbsp water

2 cups chocolate chips, divided

1 egg

1 tsp vanilla

1 cup flour

¼ tsp baking soda

¼ tsp salt

¾ cup peanut butter

⅓ cup mini chocolate chip morsels


Preheat oven to 350*. In a large glass measurer or other microwave safe bowl, add sugar, butter and water. Microwave for 1 ½ minutes. Stir until smooth. Add in ¾ cup of the chocolate chips and stir until melted. Stir in the egg and vanilla until smooth. Add in the flour, baking soda and salt, stirring until fully incorporated. Stir in the leftover cup of chocolate chips. Butter or spray oil 12 muffin tin wells. Divide the batter evenly in the muffin tin and bake for 13-15 minutes. Remove from the oven when done baking and press the middle of the brownies to create a dent or cup shape. Add 1 tbsp of peanut butter to each cup. Top with the mini chocolate chips. Allow to cool before removing from the muffin tin.
