Peanut Butter Ganache Cookie Cups

Chocolate chip cookie cups filled with peanut butter and topped with ganache. These easy 4-ingredient cookie cups are a quick and easy delight, made in a mini-muffin tin. Make your favorite chocolate chip cookie dough or use purchased dough for ease. 

1 recipe or package chocolate chip cookie dough

1 cup peanut butter (I like crunchy)

1 cup heavy cream

12 oz dark chocolate chips

Fill mini-muffin tin wells with 1 tsp dough; pressing dough up the sides of the wells. Bake at 375* for about 7 minutes. Remove the cookies from the oven and press the interior of the dough down with a k-cup, muddler, or other small device. Fill each well with 1 teaspoon of peanut butter, then top with a generous teaspoon of ganache. Allow to set up at room temperature for about an hour.
