Peanut Butter Stuffed Brownies

1 ¼ cups peanut butter

8 Tbsp butter

4 oz semi-sweet chocolate chips

1 cup sugar

2 eggs

1 tsp vanilla

½ cup flour

¼ cup unsweetened cocoa powder

¼ tsp salt


Line an 8” baking pan with parchment. Melt the peanut butter and pour evenly into the pan. Freeze for 30 minutes. Preheat oven to 350*. Remove the parchment layer of peanut butter and keep it in the freezer. Spray oil or butter the 8” baking pan and set aside. In a pyrex 8 cup measurer or microwave-safe bowl, melt butter and chocolate chips for 1-2 minutes. Stir with a rubber scraper until melted and mixed through. Add in the sugar, eggs, and vanilla mixing until smooth. Stir in flour, cocoa powder, and salt, folding in dry ingredients until just incorporated. Pour half of the mix into the prepared pan. Place frozen peanut butter layer over the batter. Top the peanut butter layer with the remaining batter spreading very gently to smooth. Bake for 30 minutes.
