Peanut Caramel Corn

Delicious and freshly made crunchy caramel corn is easy to make and so fun to give as gifts in special treat bags; don’t forget to keep some for yourself. 10 cups air-popped popcorn
1 cup brown sugar
¼ cup honey
½ cup butter
⅛ tsp cream of tartar
½ tsp salt
½ tsp baking soda
1 ½ cups peanuts or favorite nuts
Preheat oven to 200*. Pop the popcorn in a large mixing bowl and set to one side. Heat brown sugar, honey, cream of tartar, and salt in a saucepan. Cook over medium heat until the mixture reaches 234*. Remove from the heat and stir in the baking soda. Pour over the popcorn and stir, add in the nuts and stir again. Divide popcorn mixture between 2 rimmed cookie sheets and bake for 1 hour. Stir every 20 minutes. Remove from the oven and stir again to separate. Allow to cool before storing in an air-tight container.
