Peanut Butter Oat Bars

Peanut butter, chocolate chip oatmeal bars are a quick simple fix for an after-dinner treat and doubles as breakfast the next morning. Inspired by Lynette of Cleverly Simple https://www.cleverlysimple.com/peanut-butter-oatmeal-bars/ 

2 cups old-fashioned oats

1 ¼ cups flour

1 cup brown sugar

1 tsp cinnamon

1 tsp baking soda

¾ tsp salt

1 cup butter, melted

14-oz sweetened condensed milk

½ cup peanut butter (I prefer chunky)

1 cup dark chocolate chips or M&M’s

Preheat oven to 375*. In a large mixing bowl, combine oats, flour, brown sugar, cinnamon, baking soda, and salt. Stir to combine and pour in the melted butter. Mix until dry ingredients are moistened. Remove 1 ½ cups to a small bowl for topping. Press the remaining crumbs evenly into a 9.13 baking dish and bake for 10 minutes.

Mix condensed milk and peanut butter together. Pour over the partially baked crust. Mix chocolate chips into the reserved topping. Spread over the pb milk layer and bake for an additional 20 minutes. Let cool before cutting into 18 bars.
