Strawberry Cassis Mousse

Strawberry cassis puree and whipped cream mousse looks beautiful in my friend Cheryl’s cut crystal stemware.
1 pint strawberries, hulled & puréed
¼ cup sugar
3 Tablespoons cassis, strawberry or other berry liqueur
1 cup heavy cream
1 teaspoon vanilla
Fresh strawberries, for garnish
Blend strawberries, sugar, and cassis liqueur. Place 2 tablespoons of the puree in the bottom of 4 stemware glasses or other pretty glass jars. Whip the heavy cream to medium peaks, then add vanilla and the remainder of the strawberry puree. Whip to incorporate. Spoon on top of the puree and chill in the fridge. Garnish with a fresh berry and serve chilled.
