Strawberry Margarita Bars

Shortbread:
2 cups flour
½ cup powdered sugar
1 lime zested
½ of a lime juiced (reserve the other half for the topping)
1 cup butter, cut into cubes
Topping:
1 ¼ cups strawberries, hulled
1 ½ cups sugar
1 lime, zested
¾ cup lime juice (or part lemon is fine)
4 eggs
¼ cup tequila
1 Tbsp Grand Marnier or other orange liqueur, optional
¼ cup flour
½ Tbsp baking powder
Powdered sugar, for garnish
Quartered lime wheels, for garnish
Preheat the oven to 350*. In a food processor, layer flour, powdered sugar, lime zest, lime juice, and butter cubes. Pulse to fine crumbs, then pour crumbs into a 9.13 baking pan and press them with a flat-bottomed cup. Bake for 25 minutes. Meanwhile, make the strawberry topping.
In a blender or food processor, layer the strawberries, sugar, lime zest, and lime juice. Pulse or blend until smooth. In a large mixing bowl, whisk the eggs, tequila, and orange liqueur together. Pour in the strawberry mixture, then sift the flour and baking powder on top. Mix together, then pour over the par-baked crust. Bake for another 25 minutes, the outer edges will be set although the middle may still wiggle a bit. Allow to cool before slicing. Dust with powdered sugar, if desired, or slice and top each piece with a lime triangle.
