Apricot BBQ Chicken

Apricot preserves and a spicy bbq sauce marinate chicken thighs and create a lovely sauce for a quick bbq flavored skillet dish. Perfect with a pot of rice.
½ cup apricot preserves
½ cup spicy bbq sauce (Trader Joes has a spicy pineapple bbq sauce)
1 shot of rum, optional
4 chicken thighs
1 Tbsp olive oil
Mix apricot preserves and barbecue sauce together in a glass measuring cup. Place chicken in a ziploc bag to marinate, add ½ cup of the sauce (reserve the other half of the sauce for serving) over the chicken and rum, if using. Place in the fridge for a couple of hours or until ready to cook. Heat olive oil over medium high heat in a large skillet. Place chicken in the skillet and cook 3-4 minutes, add marinade while cooking the second side, turn down a little if the sticky sauce looks to be burning. Test for doneness by cutting into the largest piece at the thickest part, there should be no pink color. Remove chicken from the skillet, serve with rice and the extra sauce.
