Crispy Chicken Sandwich

Crispy fried chicken with pickles on a brioche bun and a lightly spiced thousand island dressing. Best sammie ever!!! Note that this recipe takes about 4 hours marinating time or better yet, overnight. Chicken is double coated in a cornmeal flour mix for an extra crispy crunch. 1 ¼ cups buttermilk
¾ cup dill pickle juice
1 Tbsp hot sauce, such as Franks
6 chicken thighs
1 cup flour
¾ cup cornmeal
2 tsp baking powder
½ tsp ancho chili powder (or cayenne pepper)
Salt and pepper, to taste
8 cups avocado oil (or peanut oil), for frying
Place chicken thighs in a ziplock bag with the buttermilk, pickle juice and hot sauce. Let marinate in the fridge for 4 hours or overnight.
Mix flour, cornmeal, baking powder, chili powder, salt and pepper together in a pie plate or other flat bottomed dish.
Pour marinade from chicken into a pie plate or flat bottomed dish
Preheat skillet or electric skillet, wok etc, to 360*.
Place chicken pieces in the flour mixture, then back into the buttermilk marinade, returning to the flour mixture until well coated. Fry, turning occasionally until golden brown and a thermometer inserted into the thickest part of the chicken, registers 165*. Place on a baking tray lined with paper towels and keep warm in a 200* oven.
Coleslaw:
4 cups tri-colored coleslaw
1 tomato, diced
1 green onion, sliced
2 Tbsp cilantro, chopped
¼ cup mayonnaise
1 lime, juiced
1 Tbsp hot sauce, such as Franks
Salt and pepper, to taste
Mix all coleslaw ingredients in a medium sized serving bowl.
Brioche Buns, split and toasted
Butter lettuce leaves
Tomato slices
Red onion slices
Dill pickle chips
Thousand island dressing/sauce
Thousand Island:
2 cups mayonnaise
1\4 cup red wine vinegar
2 Tbsp. each ketchup, dill relish & dill pickle juice
Garlic salt, onion powder, pepper and hot sauce, to taste
Mix together and spread on your sammie. Store leftovers in the fridge in a mason jar.
