Shiitake Mozzarella Risotto

Shiitake mushrooms, sherry, mozzarella and cream merry to create this mushroom soup style saucy risotto. 


2 Tbsp olive oil

2 cups arborio rice

2 cups shiitake mushrooms, sliced

1 cup onions, diced

2 cloves garlic, minced

2 oz dry sherry

½ cup butter

4 cups chicken broth

1 cup heavy cream

Salt and pepper to taste

4 oz fresh mozzarella cheese, sliced

Basil sprig 


In a large skillet over medium heat with the olive oil, stir in the arborio rice, mushrooms and onion until the onion and rice become translucent (about 2-3 minutes). Stir in the garlic and sherry stirring until it is absorbed. Add in the butter and ½ cup of the chicken broth, when nearly absorbed continue to add broth in ½ cup increments. Stir in the heavy cream and salt and pepper, to taste. Lay slices of fresh mozzarella on top and a sprig of basil. Bon appetit.
