Avocado Green Onion Salad with a Lemon Parmesan Vinaigrette

A lovely simple mixed baby greens salad with avocado, green onions and a lemon parmesan vinaigrette. Inspired by Danetta at Fun Squared https://fun-squared.com/lemonthemedbridalshower/ 


4 cups mixed baby greens

1 avocado, sliced

2 green onions, sliced

1 cup olive oil

½ cup red wine vinegar

¼ cup lemon juice

2 cloves garlic, minced

¼ dijon mustard

2 tsp oregano

1 tsp salt 

1 tsp pepper

¼ cup parmesan, shredded

Spread baby greens on a serving platter and top with avocado and green onion slices. Shake olive oil, vinegar, lemon juice, garlic, dijon, oregano, salt, pepper and parmesan into a mason jar. Pour desired amount over the salad just before serving. Store vinaigrette in the fridge.
