Caprese Salad & Balsamic

Caprese salad is a favorite Italian classic; I love the fresh mozzarella, summer tomato and balsamic dressing. Bene, tutto bene!


8 oz mixed baby salad greens

1 ½ cups mixed cherry tomatoes, halved

8 oz ciliegine or other fresh mozzarella, bite sized

Fresh small basil leaves, for garnish

4 oz good olive oil

2 oz aged balsamic vinegar

1 tsp dijon mustard

Toss together in a big salad bowl, the baby lettuces, cherry tomatoes and mozzarella. Garnish with some fresh small basil leaves. Whisk the olive oil, balsamic and dijon together in a small bowl and drizzle over the salad or serve Italian style with olive oil and balsamic bottles on the table with the salad so everyone can drizzle their own (omit dijon).
