Truffle Parmesan Chicken

Truffle, parmesan and black garlic perfume chicken thighs. The seasoned lemon butter is great over rice. The truffle parmesan cheese and black garlic seasoning is by EpicureanSpecialty and can be found at Costco or online.

6-8 chicken thighs

¼ cup truffle parmesan black garlic seasoning (by EpicureanSpecialty)

1 Tbsp olive oil

2 Tbsp butter, divided

½ a lemon, juiced

Fresh parsley, chopped for garnish

Marinade the chicken thighs with the truffle parmesan seasoning and 3-4 tablespoons of water in a gallon ziploc bag in the refrigerator. When ready to cook, heat olive oil and one tablespoon of butter in a large skillet. Remove chicken, reserving marinade for later. Cook 3-5 minutes a side until cooked through, check with a knife. When done remove the chicken to a serving platter and keep warm. Pour marinade juices into the skillet and stir, scraping up any browned chicken bits in the skillet. Add in the remaining tablespoon of butter and the juice of ½ a lemon. Cook  for 1-2 minutes letting it come to a boil; sauce will thicken and can be spooned over the chicken. Top with parsley.
