Baby Baked Garlic Potatoes with Shiitake Mushrooms

Baby potatoes with garlic and olive oil baked with mushrooms and sea salt. Pass your favorite baked potato toppings at the table for everyone to fix their favorite way. We served them with butter, sour cream, chives and green onions.


Mixed tri-color baby potatoes, washed 

5 oz shiitake mushrooms

4 cloves garlic, minced

Olive oil, a drizzle

Salt and pepper, to taste


Preheat oven to 400*. Fill a 9x13 pan with a single layer of the baby potatoes, top with the mushrooms and garlic. Drizzle the olive oil on top and season with salt and pepper. Bake for about 45 minutes or until potatoes are nice and tender when pierced with a knife.
