Baked Potato Bar
Prep Time: 20 mins | Cook Time: 60 min | Course: Dinner | Serves: 1 per person
A baked potato bar on steroids, top your potato to make a complete meal. A perfect meatless Monday meal, or add bacon crumbles on top.
Russet baking potatoes, 1 per person
Butter
Salt and pepper, to taste
Broccoli, steamed
Pinto beans
Sharp cheddar cheese
Tomatoes, diced
Sliced black olives
Green onions, chopped
Salsa
Sour cream
Bacon crumbles, optional
Preheat oven to 400*. Pierce the potatoes with a fork several times, about 1 large potato per person, and place them on a baking sheet. Bake for 45-60 minutes or until fork-tender.
Steam broccoli in a couple of inches of water for 5 minutes for al dente, or to your liking.
