Baked Potato Style Mashed Potatoes

Mashed potatoes with a bit of cream cheese, butter, sour cream, and green onions; all the things we love about baked potatoes in a quick red bliss mash.
1 lb baby red potatoes
4 oz cream cheese
¼ cup butter
½ cup sour cream
Salt and pepper, to taste
2 green onions, sliced
Place potatoes in a pot and cover with water. Cook over medium-high heat until potatoes are cooked through and fork tender. Drain the water off and mash with the cream cheese, butter, sour cream, salt, pepper, and green onions. Leave some of the potato pieces in small chunks for texture rather than whipping them to a completely creamy consistency.
