Beef Broccoli Stir Fried Rice

Tasty beef broccoli stir fry with caramelized onions, rice, egg, and sesame flavors. Stir fry is a great way to use up leftover rice and beef or meat of any kind. This dinner comes together quickly and is a complete meal in a dish.

2 Tbsp olive oil

1 onion, sliced

1 cup cooked rice

1 cup cooked steak (or any meat), diced

3 cloves garlic, minced

2 tsp sesame oil

16 oz broccoli florets

4 eggs

Salt and pepper, to taste

1 tsp soy sauce or to taste

2 tsp sesame seeds

Heat olive oil in a large skillet over moderate heat and stir onion around until translucent and just starting to caramelize on the edges. Break up leftover cooked rice with your hands and add to the skillet stirring for 1 minute to coat the rice with oil. Stir in cubed steak, garlic, sesame oil, and broccoli, and stir fry for 2 minutes. Push all ingredients to the outside edges of the skillet and whisk eggs with salt and pepper in a small bowl. Pour the egg mixture into the center of the skillet and scramble the eggs. When eggs are set into large curds, mix them in with the rice and beef mixture. Add soy sauce and sesame seeds and place a lid on to finish steaming the broccoli for 1-2 minutes if it’s not already al dente and cooked to your liking.
