Bang Bang Chicken

Bang bang chicken is so delicious; crunchy, sweet and mildly spicy with an amazing chili mayonnaise that is easy to make, great with a pot of rice. Adapted from the amazing Chungah at damn delicious! https://damndelicious.net/2014/06/06/bang-bang-chicken/
½ cup avocado oil
1 cup milk
1 Tbsp red wine vinegar
1 egg
1 Tbsp Franks hot sauce
¾ cup flour
½ cup cornstarch
Salt and pepper, to taste
1 lb boneless skinless chicken thighs cut into 1 inch or bite sized chunks
1 ½ cups panko bread crumbs
Chili Mayonnaise:
¼ cup mayonnaise
¼ cup sweet chili sauce
4 tsp Franks hot sauce
1 Tbsp honey, optional
Mix together the mayonnaise, sweet chili sauce, Franks hot sauce and honey in a small bowl. Set aside for serving.
In a large bowl, mix milk, vinegar, egg, hot sauce, flour, cornstarch, salt and pepper together, whisking to release any clumps. Working in batches add the chicken. Heat the avocado oil in a large skillet over medium high heat. Pour panko in a pie plate. Take a few pieces of chicken out of the batter and coat in the panko. Fry a couple minutes on each side until very golden. Remove from the skillet to a platter covered with paper towels to absorb any grease. Repeat with remaining chicken and serve while hot with the chili mayonnaise dipping sauce.
