Greek Salad

Greek salad is my favorite, kalamata olives, feta, cucumber, tomatoes and red onion married with red romaine and a red wine vinaigrette. Make the flavor of the Mediterranean tonight.


1 head red romaine or butter lettuce, washed and chopped

1 cucumber, chopped

1 cup cherry tomatoes, halved

½ a small red onion, cut into rings

½ cup kalamata olives, halved

¼ cup feta cheese, crumbled


Red Wine Vinaigrette:

⅔ cup olive oil

⅓ cup red wine vinegar

1 Tbsp dijon

½ tsp oregano

Salt and pepper, to taste


Whisk all vinaigrette ingredients together in a 2 cup mason jar. Can be shaken just before serving.


In a salad bowl, layer the lettuces, cucumber, cherry tomatoes, onion rings. Kalamata olives and feta. Drizzle with the vinaigrette and toss ingredients to coat.
