Beef Enchiladas
Enchiladas are a favorite of mine. The cheesy filling and sauce combine to create a unique mild spiced flavor, topped with sour cream...divine.
2 lbs. ground beef
½ cup onion, diced
2 cloves garlic, chopped
Salt & pepper, to taste
2 cups mozzarella, shredded
12 oz. enchilada sauce, divided
8 flour tortilla shells
1 cup olives, sliced
1 cup cheddar cheese, shredded
Sour cream
Cilantro, chopped
Preheat oven to 350* Saute the beef with the onion, garlic and seasoning. Stir in the mozzarella and ½ cup of the enchilada sauce. Warm the tortillas until they are pliable. Pour sauce in the bottom of a dish and roll a tortilla in it to coat both sides. Fill with the cheesy meat and roll into a neat enchilada shape. Repeat with the other tortillas, if there is sauce left over spread evenly on top. Sprinkle with sliced olives and cheddar cheese shreds. Cover tightly with foil and bake for 30 minutes or until cheese is melted. Serve with garnish of sour cream and cilantro.
