Blackberry and Baby Greens with Aunt Connie's Honey Mustard Dressing
Baby Lettuces come together quickly with only five simple ingredients. The summer blackberries make it special.
3 oz of baby greens
½ cup of blackberries
½ cup of carrot shreds
2 green onions, chopped
Place the baby greens in a salad bowl. Top with the berries, carrots and green onions. Drizzle the honey mustard dressing over the top just before serving.
Aunt Connie’s Honey Mustard Dressing
This amazing dressing recipe comes from Aunt Connie and usually disappears too quickly. The honey mustard dressing is unusual as it uses yellow prepared mustard instead of the more common dijon style.
½ cup red wine vinegar
1 cup olive oil
¼ cup onion, diced (or 1 tsp dried onion powder)
2 cloves garlic ( or 1/2 tsp dried garlic powder)
2 Tbsp. parsley (or dried)
¾ cup of mayonnaise, Best Foods
¼ cup yellow mustard, such as French’s
⅔ cup honey
Combine vinegar, oil, onion, garlic & parsley in the blender until well mixed. Add in mayonnaise, mustard and honey blending until incorporated. Store in the fridge in a mason jar.
