BLT Chicken Salad Croissandwiches

BLT chicken salad on a croissant is a game changer. We added mozzarella cheese and I kept the bacon in strips instead of chopping it and adding it into the mix. Inspired by Cathy at Lemon Tree Dwelling https://www.lemontreedwelling.com/blt-chicken-salad/ 

3 cups precooked chicken, chopped

Salt and pepper, to taste

1 ½ cups arugula, chopped

2 tomatoes, chopped

1 cup mozzarella, shredded

4 strips bacon, cooked

4 croissants

Dressing:

¾ cup mayonnaise

¼ cup sour cream

½ cup milk

2 tsp green goddess seasoning or other onion seasoning

1 tsp parsley

Pepper, to taste

½ lemon, squeezed

Mix chicken with salt and pepper, arugula, tomatoes and mozzarella. Chop bacon if you like and stir it in or cut in half and keep some of the sandwiches kosher. Whisk all dressing ingredients together in a mason jar, pour desired amount over chicken and stir in. Split croissants and fill with chicken mixture. Add a slice or two of bacon as desired (unless already chopped in the salad mix).
