Perline Pasta with Tomato Cream Sauce

Multi-color perline pasta stuffed with parmigiano cheese, cooked in a tomato cream sauce topped with melty mozzarella cheese. Have you seen Costco’s perline pasta purses “beads” stuffed with parmigiano. Straight from Italy to your ginormous shopping cart. I think I’m in love! 

1 Tbsp olive oil

1 small onion, diced

1 16-oz can diced tomatoes

16 oz water

6 cloves garlic

1 tsp oregano

1 ½ tsp salt

Pepper, to taste

16 oz perline pasta

1 cup heavy cream

8 oz mozzarella, sliced

In a large skillet, sautee the onion in the olive oil until soft and translucent. Add tomatoes and its juices to a blender and puree. Add puree to the skillet rinsing blender with the water, into the skillet. Stir in the garlic, oregano, salt, pepper, and perline pasta. Bring to a boil and cook about 10 minutes. Pour the cream in and stir to combine. Top with the cheese slices and allow to melt before serving.
