Caprese Risotto

Rich creamy risotto comes together in 15-20 minutes with a medley of bright colored tomatoes, pearl sized mozzarella and vibrant greens of herbs and green onions.

2 Tbsp olive oil

½ cup onion, diced

2 cups arborio rice

½ cup butter

Salt and pepper, to taste

Garlic salt, to taste

2 cloves garlic, minced

1 cup heavy cream

4 cups chicken stock

1 cup cherry tomatoes (medley), halved

1 cup perline mozzarella

¼ cup basil or parsley, chopped

2 green onions, chopped

Saute olive oil, onion and arborio rice until translucent over medium heat. Add butter seasonings, garlic and cream. Stir until partially absorbed, add chicken stock a cup at a time and continue to stir until mostly absorbed after each addition. Risotto will be al dente or just done to the bite when finished. Take off the heat and add tomatoes, mozzarella, herbs and green onions.
