Lentils with Tomatoes and Cumin
Lentils, tomatoes and warm spices infuse this delicious side dish.
2 cups lentils
½ cup onion, diced
4 cloves garlic, chopped
½ tsp salt
Garlic salt and pepper, to taste
1 tsp cumin
1 tsp chili powder
1 tsp turmeric
1 15 oz can tomatoes, diced
Cover lentils with water and bring to a boil, cook for ten minutes. Rinse in a colander and put back in the pot and cover with water. Add in the onion, garlic, seasonings and tomatoes; continue to cook 15-20 minutes longer or until tender to the bite (add more water as needed).
