Carolina Gold BBQ Chicken Sammies
Chicken sammies are a great way to mix up burger nights and carolina gold bbq sauce with mustard is a favorite.
Chicken breasts
1 Tbsp olive oil
Salt & pepper, to taste
Carolina gold BBQ sauce
Mozzarella cheese slices
Hamburger buns
Mayonnaise
Mustard
Lettuce
Tomato
Onions or pickled onions
Salt and pepper your chicken breasts and pan fry (or grill) in the olive oil about 5 minutes on medium heat per side or until no longer pink in the middle. Add 1\2 cup bbq sauce to the pan and turn to coat. Top with cheese and let rest with the lid on, but the heat off. Toast your buns and prepare a condiment and topping buffet. I like to let everyone build their own sammies.
Uncle Daves Pickled Onions:
1 quart jar, half full of vinegar
2 heaping wooden spoonfuls of hawaiian sea salt ( I got 3 Tbsp.)
1 maui onion, sliced
1 red onion, sliced
2 jalapenos, halved
Pour vinegar half full into a clean quart jar. Add Hawaiian sea salt, about 3 Tbsp. full and stir. Add sliced onions until half full, then place sliced jalapenos decoratively around the edges of the jar. Finish adding the onions until the jar is full. My red onion was quite large and I only used half of it.
