Cauliflower & Broccoli Au Gratin Slow Cooked

Cauliflower and broccoli and cheese are a natural combination.  This version is done in the slow cooker so it’s also summer friendly. Beat the heat and keep the oven off while still enjoying your favorite sides.

 

3 cups cauliflower florets

2 cups broccoli florets

¼ cup butter

¼ cup flour

1 tsp dijon  mustard

Salt, pepper and garlic salt, to taste

3 cups milk

8 oz cream cheese

2 cups sharp cheddar, shredded

Place florets in the slow cooker. In a medium saucepan cook the butter and flour over medium heat for about 2 minutes. Add dijon and all seasonings, whisk in the milk a little at a time until smooth. Top with cheese and cream cheese cooking till once again smooth. Pour into the slow cooker over veggies. Cook on high for about 2 hours or until veggies are al dente.
