Chicken over Orzo with Cherry Tomatoes and Cream Sauce

This chicken and orzo with cream sauce are the ultimate in comfort food and is great for a quick dinner. Marinate the chicken ahead of time if you can and dinner cooks in about 15 minutes.

4 (or more) chicken thigh pieces

3 cloves garlic, minced

Lemon, juiced

Lemon salt & pepper, to taste

½ tsp oregano

1 tsp ginger, minced

½ cup onion, diced

2 Tbsp olive oil

1 cup orzo pasta, cooked and drained

1 cup cherry tomatoes, halved

1 cup cream

4 Tbsp butter

2 green onions, sliced

Shredded parmesan, to taste

Marinade chicken in garlic, lemon juice, seasoning, oregano, and ginger.  Add olive oil to the skillet and heat over medium heat.  Stir in onion for a minute and add chicken pieces with marinade. Cook about 3 minutes a side and add orzo, tomatoes, cream & butter. Check chicken for doneness and taste for seasoning. Top with green onions and parmesan just before serving.
