Chicken Pasta with Avocado Cream Sauce

Sauteed garlic and chicken over hot linguini with an avocado parmesan cream sauce. Sauce comes together quickly in a food processor. Also, good with cooked pancetta as a topping. Inspired by Norman Kolpas in his Pasta Presto Cookbook.
1 lb linguini or favorite pasta, cooked per instructions
3 chicken thighs, cut into strips
3 cloves garlic, minced
2 Tbsp olive oil
1 avocado
1 cup heavy cream
¾ cup parmesan or asiago cheese, grated
4 oz cream cheese
2 Tbsp lemon juice
Salt and pepper, to taste
1 green onion, sliced
In a large skillet over medium heat, saute the chicken and garlic in the olive oil till cooked through. Puree avocado, cream, parmesan or asiago cheese, cream cheese, lemon juice and salt and pepper in a food processor. Taste and correct seasoning before tossing over hot pasta. Top with garlicky chicken strips and serve with green onions and extra grated parmesan cheese.
