Chicken Sundried Tomato Ravioli with Cream Sauce

Chicken, ravioli, and sundried tomatoes simmer in a quick-to-make cream sauce. These ravioli from Trader Joe’s are always a hit, or you can use your favorite ravioli.
2 Tbsp olive oil
1 onion, diced
1 lb chicken tenders
Salt and pepper, to taste
2 cups heavy cream
8 oz cream cheese
3 9-oz pkgs porcini mushroom truffle ravioli (I found at Trader Joe’s)
3 Tbsp sundried tomatoes
7 cloves garlic, minced
½ lemon, juiced
4 oz mozzarella cheese pearls
2 green onions, chopped for garnish
Basil leaves, for garnish
In a large skillet, heat olive oil over moderate heat and stir onion for 3-5 minutes, until soft and translucent. Add in chicken tenders, salt, and pepper. Cook for 5-6 minutes, until the chicken is cooked through. Remove the chicken to a plate and keep warm. Stir in the heavy cream, cream cheese, ravioli, and sundried tomatoes. Cover with a lid and cook for 3 minutes. Remove the lid and stir the chicken back into the skillet along with the lemon juice, garlic, and mozzarella cheese, cook for an additional minute while stirring until heated through. Garnish with green onions and basil leaves.
