Lovely citrus garlic Dijon butter gets brushed over pan fried halibut fish fillets. Beware that halibut can be dry if overcooked. Inspired by Maille https://uk.maille.com/blogs/recipes/orange-dijon-grilled-halibut?srsltid=AYCX9vI3Jj7SpXEEB4ti2aZlazoMvf0EqB5eFy8yJnl0-63wILPcAfz5

4 large halibut fish fillets
Salt and pepper, to taste
Ground coriander, a sprinkle
1 Tablespoon olive oil
Citrus Butter:
1 orange, zested and juiced
1 lime, zested and juiced
3 cloves garlic, minced
2 Tablespoons butter, melted
1 Tablespoon Dijon mustard
1 Tablespoon whole grain mustard
1 Tablespoon green onion the white part), minced
Salt and pepper, to taste
Pat the fish dry between paper towels and seasoned them with salt, pepper and coriander.
Whisk citrus butter ingredients in a small bowl.
Preheat the olive oil in a large skillet and sear the halibut fillets over medium-high heat for 3-4 minutes. Flip the fish over and cook for another 2-3 minutes, lowering the heat as necessary. The fish will begin to flake in places and be white rather than opaque when a knife is inserted in the middle.
Brush generously with the citrus butter and serve.
